Roasted Garlic Cloves

- 1/3 cup fresh garlic cloves

- 1 pound fresh baby spinach
Ripe Tomato & Spinach Pizza
Ingredients
- 1-16-inch whole grain thin pizza crust
- 1/2 cup part-skim ricotta cheese
- 1/2 cup part-skim shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese, divided
- 1 teaspoon chopped fresh parsley or 1/4 teaspoon dried parsley
- 1 ½ cup diced tomatoes
- 1/2 cup fresh basil leaves, hand torn
- 1 teaspoon freshly cracked black pepper
To Prepare Roasted Garlic Cloves
- Place garlic cloves on sheet trays. Spray with cooking oil spray. Roast in a preheated 400-degree Fahrenheit oven for 10 minutes or until lightly golden. Remove from heat and allow to cool. Roughly chop before using.
To Prepare Wilted Spinach
- Steam spinach for 30 seconds or until barely wilted. Remove from heat and allow to cool slightly.
To Prepare Ripe Tomato & Spinach Pizza
- Preheat the oven to 375 degrees Fahrenheit or the heat recommended by the manufacturer.
- Mix ricotta, mozzarella, 1 Tablespoon Parmesan cheese, and parsley until combined. Evenly spread to 1/4-inch from the edge of each crust.
- Cover cheese mixture with about 1 ½ cups coarsely chopped wilted spinach to 1/2-inch from the edge of the crust.
- In order, evenly top with:
- 3 Tablespoons chopped roasted garlic
- 1 ½ cups diced tomatoes
- 3 Tablespoons shredded Parmesan cheese
NOTE: Do not pile ingredients in the center but concentrate on spreading them towards the outside edges. - Place in preheated oven. Bake for 8 to 9 minutes. Remove from heat and cool for 1 to 2 minutes.
- Evenly top with 1/2 cup of torn basil and 1 teaspoon of freshly cracked black pepper.
- Cut into 8 even slices. Enjoy immediately!
