Coffee, milk and honey frozen into a healthy popsicle. 1 ½ cups coffee or strongly brewed #coffee, cooled
½ cup fat free milk or #milk alternate
2 Tablespoons #honey Place all ingredients in a blender. Blend on high speed until well combined.
Evenly pour into 6 popsicle molds. Place tops and freeze for at least 4 to 5 hours.
NOTE: If using a wooden stick, freeze for 1 hour. Remove from freezer and insert sticks. Place in the freezer for another 4 hours.

Celebrate #tacotuesday with these Grilled Fish Tacos with Mango Slaw. Cilantro Lime Mayonnaise:
3/4 teaspoon #lime juice
1/4 cup low fat mayonnaise
1/2 teaspoon chopped fresh #cilantro Grilled Tilapia:
10 ounces tilapia, thawed
1/8 teaspoon ground black pepper Tacos:
8- 6” whole grain flour tortilla
1/2 cup shredded green #cabbage
2 1/2 Tablespoons lime juice
1/2 cup thinly sliced red onion
1/2 cup diced #mango
2 1/2 Tablespoons chopped fresh cilantro To Make Cilantro Lime Mayonnaise:
In a bowl, combine lime juice, low fat mayonnaise and chopped cilantro. Mix well. Hold refrigerated until ready to use.
To Grill Tilapia:
Spray tilapia with oil spray. Evenly sprinkle with pepper.
Grill fish until marked on both sides, firm, flaky and cooked through. Cut into 8 equal size pieces.
NOTE: If grill is not available, cook fish in a pan or oven until firm, flaky and cooked through. To Make Grilled Fish Tacos:
Toss cabbage with lime juice until evenly coated. Set aside.
Heat tortilla until warm and soft.
Lay tortilla on a clean and flat surface. Place 1 Tablespoon lime cabbage over center of each tortilla.
Place 1 piece of tilapia over cabbage.
Top fish with:
1 Tablespoon sliced onion
1 Tablespoon diced mango
1 tsp chopped fresh cilantro.
Evenly drizzle tacos with cilantro lime mayonnaise.
Fold over to close. Serve 2 tacos. Enjoy immediately. #fishrecipe #tacos #food #love #summer #grill

1 teaspoon fresh basil, finely chopped
⅛ teaspoon salt
⅛ teaspoon white pepper 🍅 To Prepare Lemon Shallot Vinaigrette
Combine white wine vinegar, lemon juice, olive oil, mustard, honey, garlic, basil, salt, and pepper. Whisk until well blended.
Cover, and place in the refrigerator until ready to use. Stir well before using. Telera Roll Croutons Ingredients
4 oz Telera roll 🍅 To Prepare Telera Roll Croutons
Slice Telera roll in half and spray with vegetable oil spray. Toast or grill on medium-high heat for 3-5 minutes or until golden brown on both sides.
Cut each half into 16 croutons; this will make approximately 1 ⅓ cups Telera Roll Croutons. ½ cup Lemon Basil Vinaigrette
1 ⅓ cup Telera Roll Croutons or croutons of choice
12 cups (~7 oz by weight) baby arugula
1 pound heirloom tomatoes, cut into wedges
6 Tbsp (3 oz) fresh mozzarella cheese, diced small
2 cups low sodium cannellini beans, drained & rinsed
4 teaspoons balsamic glaze 🍅 To Prepare Tuscan Heirloom Caprese Salad:
In a large bowl, combine #arugula, tomatoes, #mozzarella cheese, cannellini beans, croutons, and lemon #basil vinaigrette.
Toss until evenly coated.
Divide salad between four large plates.

Wholesome, vibrant, and packed with flavor – meet your new favorite recipe the Asian-Style Salmon Rice Bowl. 2 cups low-sodium #chicken stock, store-bought or homemade
1 cup raw brown rice
4 cups fresh #cauliflower florets (about one medium cauliflower)
2 teaspoons canola oil
1/2 cup thinly sliced green onions, divided
2 Tablespoons peeled and finely chopped fresh ginger root
7 ounces (about two packs) shiitake mushrooms, sliced
1 Tablespoon and 1 teaspoon low sodium soy sauce
1/2 cup frozen #edamame, thawed
1/2 avocado, peeled, seeded, and diced
1 ½ cup peeled, seeded, and diced fresh mango
1 Tablespoon #lime juice
2 Tablespoon white miso paste
1 Tablespoon water
1 Tablespoon #honey
1 pound wild #salmon, cut into four equal size pieces To Prepare Asian-Style Salmon Rice Bowl:
In a pot, add stock and rice. Bring to a boil. Cover, reduce heat, and simmer for 20 minutes or until rice is tender and liquid is absorbed. Be careful not to overcook. Remove from heat, and let stand for 5 minutes. Then, fluff with a fork.
Place the cauliflower in a food processor. Pulse until rice-like texture.
Heat oil in a wok over medium-high heat. Add in 1/4 cup green onions and ginger. Cook for 1 minute.
Add riced cauliflower, mushrooms, and soy sauce. Cook for 5 to 10 minutes or until cauliflower is tender. Add to rice and toss. Remove from heat to serve warm.
Combine edamame, avocado, mango, and lime juice for salad in a mixing bowl. Cover and place in the refrigerator until ready to use.
Combine miso, water, and honey. Brush salmon on both sides. Heat a nonstick skillet over medium heat, and cook salmon for 2 to 3 minutes on each side until lightly charred and fully cooked. Remove from heat and keep warm.
When ready to serve, place 1 cup of rice mixture in the center of a serving plate or bowl.
Place 3/4 cup edamame salad over rice. Place 1 salmon fillet over the center of the rice. Evenly top with 1 Tablespoon sliced scallions. Enjoy! #shiitake #cauliflower #salmon #mango #avocado #edamame #brownrice

With just a few basic container gardening supplies, you’ll be growing fresh and healthy edibles in no time at all and eating more mindfully just a few weeks after planting. WHAT YOU’LL NEED 🪴 Pots, Planters, and Containers: Use 6-inch or larger containers for herbs and at least 12-inch pots for vegetables. 🪴 Soil: Purchase a commercial, chemical-free planting mix that has some compost and a slow-release fertilizer mixed in. Avoid bagged topsoil and don’t use soil from your yard for containers. 🪴 Trowel: You’ll only use one tool—a trowel, so be sure to buy one that feels good in your hand. You’ll use the trowel to fill containers and dig holes for seedlings or for planting seeds. 🪴 Container trellis or support: If you’d like to grow a vining vegetable, like cucumbers, peas or pole beans, you’ll need a simple support of bamboo or metal. 🪴 Seedlings or seeds: Buy nursery-grown seedlings or seed packets and be sure there’s growing information available about the plant, either on a plant tag, seed packet or online. 🪴 Sunlight: Choose a sunny spot for your containers, with at least 6 hours a day of direct sun. 🪴 Water: Containers need to be watered thoroughly daily with a watering can or hose (terra cotta containers dry out quickly and may need water twice a day). 🪴 Chemical-free fertilizer: Since you’re growing edibles, choose an organic fertilizer to add soil nutrients, such as fish emulsion, seaweed extra or compost tea.
