Smashed pea hummus on a toasted multigrain bread with radishes, feta and dill and a drizzle of extra virgin olive oil

Ingredients
- 350g green peas, fresh or frozen cooked and refreshed
- 28g extra-virgin olive oil, divided
- 1 fresh lemon zested & juiced
- 4g salt
- 5g freshly ground black pepper
- 8 Slices of Malted Grain Bloomer
- 28g radish, thinly sliced into half moons
- 28g spring onion, thinly sliced
- 56g crumbled feta cheese
- 5g fresh dill
- 10ml olive oil
- 5g freshly ground black pepper
STEP ONE:
- Place the green peas in boiling water till cooked and refreshed
STEP TWO:
- Put the peas, 1st oil, zest and juice of lemons, salt and 1st pepper in a blender & pulse until broken down but not totally smooth.
STEP THREE:
- Thinly slice radishes, spring onion, and chop dill.
STEP FOUR:
- Toast the bread then loosely spread each slice with a portion of pea mixture then top with vegetables
STEP FIVE:
- Crumble feta cheese evenly on top of vegetables
STEP SIX:
- Drizzle with the 2nd olive oil and sprinkle dill and 2nd black pepper evenly on all eight slices.
