Charred chicken and courgette ribbons with broccoli and green olives.

Ingredients
- 4 skinless chicken fillets (115g each)
- 200g of purple sprouting broccoli
- 200g of courgettes cut into ribbons (Use a peeler to do this)
- 10ml of olive oil
- Large pinch of salt
- Large pinch of black pepper
- 1 lemon zested then wedged
- Blanch courgette ribbons and broccoli florets in boiling water.
- Refresh courgette ribbons and broccoli in ice cold water, drain and mix with the olive oil and half the seasoning.
- Heat a non-stick griddle pan, add the chicken and cook for about 3-4 minutes on each side.
- Add in the lemon wedges and cook for a few more minutes.
- Remove the chicken and keep warm.
- Add the broccoli, courgettes, lemon zest and olives to the griddle pan and heat through.
- Serve by placing the vegetables in the center of the plates and top with the chicken.
