Ingredients
- 4 khobez flat bread or similar (60g each)
- 200g red cabbage
- 12g flat parsley
- 2 lemons
- 4g black mustard seed
- 1/2 teaspoon of dried chillies
- 3 avocados
- 40g sun dried tomatoes
- 4 cherry tomatoes
- 6 tablespoons of sweet chilli sauce
- 60g mixed leaves
- Make the slaw by finely slicing the cabbage, washing and chopping the parsley, zesting and juicing the lemon and mixing in a bowl with mustard seeds and chillies. Then allow to rest for 30 minutes.
- While the slaw is marinating, peel and destone the avocado and cut into cubes. Place it in a bowl and mash with a fork. Mix with the chilli sauce, chopped sun dried tomatoes and halved cherry tomatoes.
- Lay out the flat breads and add a portion of the smashed avocado mix to the bottom half, then add the slaw and top with a portion of the salad leaves. Fold in the sides and roll to form a cylinder shape.
- Cut at an angle and serve.
