Ingredients
- 830ml Water
- 480g Butternut Pumpkin, peeled and deseeded, small dice
- 130g Brown onion, small dice
- 200ml Light Coconut Milk
- 20ml Sweet Chilli Sauce
- 12g Coriander, washed and roughly chopped
- 6ml Fish Sauce
- 5ml Canola Oil
- 3g Crushed Ginger
- 3g Chicken Booster Powder
- Place oil in pot and sweat brown onions and ginger without colouring
- Add pumpkin, water, chicken powder, sweet chilli sauce and fish sauce, cook until pumpkin is soft
- Add coconut milk and coriander blend until soup has smooth consistency

- 30ml Light coconut milk
- 9g Micro herbs
- 2g Sesame seeds, toasted
- Ladle soup into serving bowl, drizzle coconut milk and sprinkle with micro herbs and toasted sesame seeds
