Thai Pumpkin and Coconut Soup

Ingredients
  • 830ml Water
  • 480g Butternut Pumpkin, peeled and deseeded, small dice
  • 130g Brown onion, small dice
  • 200ml Light Coconut Milk
  • 20ml Sweet Chilli Sauce
  • 12g Coriander, washed and roughly chopped
  • 6ml Fish Sauce
  • 5ml Canola Oil
  • 3g Crushed Ginger
  • 3g Chicken Booster Powder

Place oil in pot and sweat brown onions and ginger without colouring

Add pumpkin, water, chicken powder, sweet chilli sauce and fish sauce, cook until pumpkin is soft

Add coconut milk and coriander blend until soup has smooth consistency

  • 9g Micro herbs
  • 2g Sesame seeds, toasted

Ladle soup into serving bowl, drizzle coconut milk and sprinkle with micro herbs and toasted sesame seeds
