Superfood Peach Berry Parfait
- 2 2/3 cups Vanilla Chia Pudding
- 8 oz frozen peach slices, roasted
- 1 cup blueberries
- 2 teaspoons honey
- 1 cup Pepita Granola
- 1. Thaw and drain frozen peach slices. Spread in a single layer on a parchment-lined sheet pan. Roast in a preheated 450 degrees Fahrenheit oven for 10 to 12 minutes, or until tender and lightly caramelized. Cool before using.
- 2. Spoon 2/3 cup chia pudding into each serving glass or bowl.
- 3. Add 4 to 5 roasted peach slices on one side and 1/4 cup blueberries on the other.
- 4. Drizzle 1/2 tsp honey over fruit and top with 1/4 cup granola.
- 5. Enjoy immediately.
Vanilla Chia Pudding
- 2 1/3 cups unsweetened almond milk
- 1/3 teaspoon pure vanilla extract
- 1/2 cup chia seeds
