Smoked salmon, cucumbers, red onion, radish, watercress served with light chive cream cheese on pumpernickel

Ingredients
- 1/4 cup light whipped cream cheese/chives
- 4 slices pumpernickel bread
- 1 cup watercress
- 4 slices smoked salmon fillet (lox)
- 1/3 cup seedless cucumbers, quartered, sliced 1/8 inch
- 1/4 cup red onion, sliced thin, 1 inch strips
- 1 1/2 tablespoons capers, drained
- 1/4 cup radishes, sliced thin
- 16 sprigs fresh dill weed
- 1/2 teaspoon cracked black pepper
- 2 cups red seedless grapes

Ingredients
- 1/4 cup light cream cheese
- 3/4 teaspoon fresh chives, chopped

Light Whipped Cream Cheese with Chives: In a mixing bowl, combine all ingredients. Beat cream cheese for 3 minutes or until fluffy.

For Service: Spread 1 tablespoon chive cream cheese on 1 slice of bread. Top with 1/4 cup watercress. Evenly layer 1 slice smoked salmon over watercress. Layer 2 slices cucumber, 1/2 tablespoon red onion, 1 teaspoon capers, and 1 tablespoon radishes over salmon. Top with 4 dill sprigs. Sprinkle 1/8 teaspoon cracked black pepper evenly over sandwich. Serve with 1/2 cup red seedless grapes.
