Citrus and Fennel Wedge Salad
- 4 cups Lemony White Bean Salad
- 1/2 head of iceberg lettuce cut into 4 wedges
- 3 cups Fennel Citrus Salad
- 1/2 cup sliced almonds, toasted
- 1/4 cup fennel fronds, chopped
- 1. Place 1 cup of Lemony White Bean Salad in the center of each plate.
- 2. Place 1 iceberg wedge on top of the bean salad on each plate.
- 3. Garnish each iceberg wedge with the following: - 3/4 cup fennel citrus salad - 2 tablespoons toasted almonds - 1 tablespoon fennel fronds.
- 4. Enjoy immediately or cover and refrigerate for up to 1 day.
Lemony White Bean Salad
- 1 lemon, zested and juiced
- 2 (14.5-ounce) cans low-sodium cannellini beans, drained and rinsed
- 1 tablespoon chopped oregano
- 2 tablespoons chopped parsley
- 2 tablespoons canola oil
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1. Mix all ingredients in a large bowl. Cover and refrigerate for up to 3 days or until ready to enjoy.
Fennel Citrus Salad
- 1/4 cup olive oil
- 2 tablespoons honey
- 2 tablespoons white wine vinegar
- 1/4 teaspoon ground coriander
- 1 cup shaved fennel
- 1 cup grapefruit segments
- 1 cup orange segments
- 1/4 cup shaved red onion
- 1. In a medium bowl, whisk together the olive oil, honey, vinegar, and coriander.
- 2. Add the shaved fennel, grapefruit, orange, and red onion. Gently fold them together until they are combined. Cover and refrigerate for up to 2 days.

- Short on time? Buy precut orange and grapefruit segments from the store—or go fresh and make your own citrus supremes! You’ll need about 2 oranges for 1 cup of segments and 1 large grapefruit for 1 cup. Juicy, bright, and totally worth it either way!
