- 1 cup matchstick carrots
- 1 cup shredded celery
- 3/4 cup Mindful Blue Cheese Dressing
- 12 ounces thinly sliced grilled chicken breast
- 4 teaspoons Tabasco sauce
- 2 tablespoons Buffalo sauce
- 4 (10-inch) whole wheat tortillas
- 1/4 thinly sliced green onions
- 1 cup carrot sticks
- 1 cup celery sticks
- 1. In a bowl, toss the matchsticks carrots and shredded celery in the blue cheese dressing.
- 2. In another bowl, toss the chicken with the Tabasco and Buffalo sauce until evenly coated.
- 3. Warm the tortillas on a griddle or in a microwave until soft and pliable.
- 4. Layer the following on the bottom third of each tortilla: - 1/2 cup dressed vegetables - 1/2 cup (about 3 oz) sliced chicken - 1 tablespoon sliced scallions.
- 5. Roll the tortilla tightly, tucking in the sides as you go. If desired, place seam-side down on a hot griddle for 30 seconds to seal.
- 6. Slice each wrap on a diagonal and enjoy immediately with 1/4 cup each of celery and carrot sticks!
Mindful Blue Cheese Dressing
- 2/3 cup low-fat cottage cheese
- 1/3 cup nonfat plain yogurt
- 3 tablespoons blue cheese crumbles
- 1/8 teaspoon Worcestershire sauce
- 1/8 teaspoon garlic powder
- 1/8 teaspoon ground white pepper
- 1/8 teaspoon kosher salt
- 1. In a blender or food processor, blend cottage cheese, yogurt, half of the blue cheese crumbles, Worcestershire sauce, garlic powder, white pepper, and salt. Blend for about 1 minute or until smooth, occasionally scraping down the sides.
- 2. Add the remaining blue cheese and pulse about 10 times to combine.
- 3. Cover and refrigerate for up to 2 days
