- 12 cremini mushrooms, cut in half
- 8 to 12 slices Herb-Roasted Turkey Breast
- 1/3 cup red onion, thinly sliced
- 4 (6x6 inch) whole grain flatbreads
- 1/2 cup Chipotle Cranberry Spread
- 4 slices Swiss cheese
- 2 cups red grapes
- 1. Preheat the oven to 425 degrees Fahrenheit. Spread mushrooms on a parchment-lined baking sheet. Lightly coat with cooking spray. Roast for 15 minutes, turning once halfway through cooking, until lightly browned and tender.
- 2. Heat a large skillet or griddle over medium heat. Add the sliced turkey, roasted mushrooms, and red onions. Cook for 2 to 3 minutes, stirring occasionally, until heated through and the onions begin to soften.
- 3. Place the flatbreads on the griddle and toast for about 1 minute per side. Spread 2 tablespoons Chipotle Cranberry Spread evenly over each flatbread.
- 4. Divide the turkey mixture among the flatbreads. Top each with 1 slice of Swiss cheese and cook for about 1 minute, or until the cheese melts.
- 5. Fold the sides of each flatbread over the filling to create a handheld sandwich.
- 6. Secure with a toothpick, if desired, and serve with 1/2 cup of red grapes.
Herb Roasted Turkey Breast:
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon canola oil
- 1-pound boneless turkey breast
- 1. Preheat the oven to 325 degrees Fahrenheit.
- 2. In a small bowl, combine all spices with oil. Rub the seasoning mixture evenly over the turkey breast.
- 3. Place the turkey on a rack set inside a roasting pan or baking dish. Roast for 45 to 60 minutes, or until the thickest part reaches an internal temperature of 165 degrees Fahrenheit.
