Grilled Fish Taco with Mango Slaw

Grilled Fish Tacos with Mango Slaw
- 8 - 6” flour tortillas
- ½ cup shredded green cabbage
- 2 ½ Tablespoons lime juice
- 8 pieces Grilled Tilapia
- ½ cup thinly sliced red onion
- ¾ cup diced mango
- 2 ½ Tablespoons chopped fresh cilantro
- ¼ cup Cilantro Lime Mayonnaise
- 1. Toss cabbage with lime juice until coated. Set aside.
- 2. Heat the tortillas in a microwave or in a skillet until warm and pliable.
- 3. Place 1 tablespoon of the lime cabbage mixture in the center of each tortilla.
- 4. To build each taco, place in order:
-1 piece tilapia
-1 tablespoon sliced onion
-1 ½ tablespoons diced mango
-1 teaspoon chopped fresh cilantro - 5. Evenly drizzle each taco with 1 ½ teaspoons cilantro-lime mayonnaise
- 6. Plate 2 tacos and enjoy immediately!
Cilantro Lime Mayonnaise
- ¾ teaspoon fresh lime juice
- ¼ cup light mayonnaise
- ½ teaspoon chopped fresh cilantro
- 1. In a bowl, combine all ingredients and mix well. Cover and refrigerate until ready to use.
Grilled Tilapia
- 10 ounces tilapia, thawed
- ⅛ teaspoon ground black pepper
- 1. Preheat grill over medium-high heat. Lightly spray the fish with cooking spray (not listed) and season with black pepper.
- 2. Grill the fish for about 2 to 3 minutes on each side, or until it flakes easily and reaches a minimal internal temperature of 145 degrees Fahrenheit.
- 3. Remove from heat and cut into 8 equal-sized pieces and set aside.
