Seared Tuna
Ingredients
- 600g Tuna
- 30ml Canola Oil
- 5g Salt
- 2g Pepper
- Season tuna fillet with salt & pepper.
- Heat oil in pan until and smoking, then sear tuna on every side for approximately 40 seconds, then put aside to rest and chill
- Slice into 5mm thick slices when required
Brown Rice Sushi
Ingredients
- 300g Brown Rice
- 450ml Water
- 60 ml Rice Vinegar
- 80ml Mirin
- Steam brown rice
- Mix Rice vinegar and mirin well
- While rice is still warm gently mix vinegar mix through
Slaw
Ingredients
- 60g White Cabbage, finely shredded
- 60g Red Cabbage, finely shredded
- 60g Carrots, finely shredded
- Gently mix all ingredients together and dress with juice from pickled ginger
Garnish
Ingredients
- 80g Lebanese Cucumber, finely shaved
- 60g Pickled Ginger
- 30g Watercress
- 30g Micro herbs
- 2g Sesame Seeds, toasted
- Divide sushi rice evenly into serving bowls, then top with the sliced tuna. Add slaw, then rolled cucumber slices and herbs, sprinkle toasted sesame seeds onto the tuna
