Ingredients
- 8 thick sandwiches (dark whole wheat)
- 180 g soft goat cheese
- 1 apple
- 40 g spinach
- 2 tbsp honey
- 4 tsp pine nuts
- Thinly slice the apple and roast the pine nuts in a dry pan
- Crumble the goat cheese. Spread the spinach, apple and goat cheese on the sandwiches. Garnish with pine nuts and honey and put the second bread slice on top
- Grill the sandwich in a toaster for 6-8 minutes
