Ingredients
- 600g watermelon
- 120g goat cheese
- 1/2 cucumber
- 80g rocket
- 60g black olives without pit
- 1 tortilla wrap
- 2 tbsp tomato tapenade
- 4 tbsp sunflower seeds
- 4 tbsp balsamic
- bunch of mint
- Preheat the oven at 180 degrees
- Cut the watermelon into cubes of 2cm and cut the cucumber into slanted slices. Crumble the goat cheese
- Spread the tomato tapenade onto the tortilla wrap, cut of the edges and cut in 4 strips. Bake off for 5 minutes in the oven untill they are crispy
- Spread the rocket, watermelon, cucumber, goat cheese and olives on 4 plates
- Garnish with sunflower seeds, mint leaves and balsamic. Place a tortilla strip onto the salad
