Ingredients
- 400gr cherry tomatoes
- 240gr mozzarella
- 140gr whole-wheat penne
- 80gr rocket
- 100ml balsamic vinegar
- Handful of pine nuts
- Handful of basil
- 1 tbsp olive oil
- Cook the pasta according to the directions on the package. After draining, mix the pasta with the olive oil and let it cool down.
- Toast the pine nuts in a dry frying pan until golden brown.
- Halve the cherry tomatoes and slice the mozzarella into cubes.
- Devide the rocket, pasta, cherry tomatoes and mozzarella among the plates.
- Garnish with the basil, pine nuts and the balsamic vinegar.
