Ingredients
- 120 gr spinach
- 140 gr quinoa
- 2 oranges
- 140 gr white beans
- 120 gr grilled bell pepper (from a jar)
- 1 red onion
- 80 gr white cheese cubes
- 4 tbsp white raisins
- 4 tbsp (basil) vinaigrette
- Cook the quinoa according to the directions on the package. Drain the bell pepper and cut into pieces. Cut the red onions into paper-thin rings, peel the oranges and cut into wedges.
- Rinse the white beans with water and let them drain. Drain and crumble the cheese cubes.
- Mix the quinoa with the bell pepper, the white beans, the red onion rings and the raisins. Divide the spinach over the plates and divide the quinoa salad over it.
- Garnish the salad with the orange segments and the cheese cubes. Divide the dressing over the salads.
