Yield: 4 servings
- 4 beet tortillas
- 200 g chioggia beets
- 1 cucumber
- 100 fresh spinach
- 160 g soft goat cheese
- 80 g quinoa
- Cook the quinoa (follow the instructions on the package) and let cool.
- Peel the beets and cut into very thin slices. Slice the cucumber.
- Layer the tortillas with spinach, crumbled goat cheese, cucumber, beets and quinoa. Roll up the tortilla and cut them diagonally.
