Roxy’s Oatmeal Cookies

Oatmeal cookies made with banana and zucchini

Ingredients
  • 1/3 cup brown sugar
  • ¼ cup egg substitute
  • ¼ cup canola oil
  • 1 cup oats
  • 1 tsp vanilla extract
  • 1 banana, mashed
  • ½ cup zucchini, grated
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp ground cinnamon
Instructions

Preheat oven to 350 degrees.

Beat the sugar, egg substitute and canola oil with an electric mixer. Add the oats, vanilla, mashed banana, zucchini and combine well. Add the flour, soda and cinnamon and beat until well mixed.

Drop the dough by rounded tablespoons onto a baking sheet, about one-inch apart.

Bake for 10 minutes until golden brown.
