Ellie Krieger’s Breakfast Grain and Sauteed Banana Bowl

Creamy steel cut oat, quinoa and chia seed mixture topped with caramelized bananas and toasted walnuts

Ingredients
  • 1/4 cup walnut pieces
  • 1 pint + 1 cup water
  • 1/8 teaspoon kosher salt
  • 1/2 cup steel cut oatmeal
  • 1/2 cup red quinoa
  • 1 cup 2% milk
  • 1 tablespoon chia seeds
  • 1/4 teaspoon imitation vanilla extract
  • 1 tablespoon unsalted butter
  • 12 ounces firm bananas, sliced 1/2 inch
  • 1 1/2 tablespoons dark brown sugar
  • 1/8 teaspoon ground cinnamon

Preparation:
Toast walnuts in a sauté pan until lightly golden. Bring water and salt to a boil. Stir in oats. Reduce heat to medium low, simmer uncovered, for 10 minutes. Stir in quinoa, continue to simmer for 10 minutes. Stir in milk, simmer for 5 minutes. Stir in chia seeds and vanilla. Remove from heat and cover. Heat butter in a nonstick skillet over medium-high heat. Add bananas slices and cook 1 minute. Turn over and cook another minute. Sprinkle with brown sugar and cinnamon. Cook, stirring gently, for 1 minute or until sugar melts. Remove from heat.

For Service:
Place 6 ounces hot cereal in a serving. Top with 1 3/4 ounces bananas and 1 tablespoon toasted walnuts.
