Katelan H. knows just what will bring a smile to your day—her grandmother’s beef stew. That was the inspiration behind the Columbia College undergrad’s bowl of yummy deliciousness. She looked for ways to put a lighter spin on the treasured dish, and our Make It Mindful judges thought she nailed it. Tender orzo pasta (which is a similar shape as rice), Mindful Beef Mushroom Burger, a bevy of vegetables and lots of flavorful spices are slow-cooked to perfection in a healthy vegetable stock.
