Croquante en bouche, elle peut servir d\u2019enrobage croustillant pour le poulet ou le poisson cuits au four. Il s\u2019agit de l\u2019ingr\u00e9dient star de Risotto d&#8217;amarante et chou-fleur de Sens\u00e9.<\/p>\n<p>Freekeh (bl\u00e9 vert)<\/p>\n<p>En d\u00e9pit de son nom farfelu, le freekeh n\u2019est en fait que du bl\u00e9 vert grill\u00e9. Son go\u00fbt de noisette agr\u00e9mente parfaitement une salade, comme la nouvelle Salade de freekeh et framboises au poulet de Sens\u00e9.<\/p>\n<p>Quinoa<\/p>\n<p>Rapide \u00e0 cuire et sans gluten, cette c\u00e9r\u00e9ale riche en prot\u00e9ines est parfaite comme plat d\u2019accompagnement, en soupe ou simplement servie froide en salade. Nous l\u2019utilisons m\u00eame dans notre pr\u00e9paration de Cre\u0302pes au quinoa rouge.<\/p>\n<p>Sorgho<\/p>\n<p>Aliment de base africain depuis des centaines d\u2019ann\u00e9es, son enveloppe ext\u00e9rieure comestible a une valeur nutritive sup\u00e9rieure \u00e0 celle des c\u00e9r\u00e9ales dont la cosse doit \u00eatre retir\u00e9e. La farine de sorgho poss\u00e8de un go\u00fbt sucr\u00e9 qui convient parfaitement \u00e0 la cuisson sans gluten.<\/p>\n<p>Millet<\/p>\n<p>Riche en magn\u00e9sium, qui soutient la r\u00e9paration musculaire et la fonction nerveuse, le millet poss\u00e8de une saveur douce semblable \u00e0 celle du ma\u00efs et peut \u00eatre saut\u00e9 dans une po\u00eale s\u00e8che pour cr\u00e9er des en-cas croustillants.<\/p>\n<p>\u00c9peautre<\/p>\n<p>Cette c\u00e9r\u00e9ale savoureuse originaire de l\u2019ancienne M\u00e9sopotamie est riche en fibres, en prot\u00e9ines et en min\u00e9raux. \u00c0 essayer dans notre d\u00e9licieux Rago\u00fbt aux pois chiches, farro et \u00e9pinards (insert link when we have it).<\/p>\n<p>Teff<\/p>\n<p>Les \u00c9thiopiens utilisent ce minuscule grain depuis des si\u00e8cles pour faire du pain.
