Think old. These ancient grains \u2013 some first cultivated millennia ago \u2013 have lots to offer your taste buds and your health. Many of these are inexpensive, easy to cook and are used in a lot of great <a href=\"https:\/\/www.mindful.sodexo.com\/en-nl\/mindful-meals-recipes\/\">Mindful dishes<\/a>!<\/p>\n<p><strong>Amaranth<\/strong><br \/>\nThe Aztecs revered this hardy plant, which is high in protein and calcium. It has crunch, and a mild nutty taste, so using it as a crisp coating for baked chicken or fish is a tasty option.\u00a0 It\u2019s the star in Mindful\u2019s Cauliflower and Amaranth Risotto.<\/p>\n<p><strong>Freekeh<\/strong><br \/>\nFreekeh sounds freaky, but it\u2019s really just wheat that\u2019s harvested while still green. It\u2019s got a nice nutty flavor that you\u2019ll love in Ellie Krieger\u2019s Freekeh and Raspberry Salad.<\/p>\n<p><strong>Quinoa<\/strong><br \/>\nQuinoa\u2019s becoming a kitchen mainstay, because it\u2019s versatile, quick-cooking and gluten-free. Try it as a side, in soups and salads, and especially in Mindful\u2019s Baja Fish and Quinoa Tacos!<\/p>\n<p><strong>Sorghum<\/strong><br \/>\nA staple in Africa for hundreds of years, sorghum\u2019s edible outer hull retains more nutrients than grains that must be hulled. Sorghum flour has a sweet taste that\u2019s just right for gluten-free baking.<\/p>\n<p><strong>Millet<\/strong><br \/>\nHigh in magnesium, which is important for muscle repair and nerve function, millet has a mild corn-like taste.\u00a0 It can be turned into a crunchy snack by popping it in a dry frying pan.<\/p>\n<p><strong>Farro<\/strong><br \/>\nA well-known ancient grain from the Mesopotamia region, farro is savory, with lots of fiber, protein and minerals.
