It has crunch, and a mild nutty taste, so using it as a crisp coating for baked chicken or fish is a tasty option.\u00a0 It\u2019s the star in Mindful\u2019s <a href=\"https:\/\/www.mindful.sodexo.com\/ca\/recipes\/cauliflower-amaranth-risotto\/\">Cauliflower and Amaranth Risotto<\/a>.<\/p>\n<p><strong>Freekeh<\/strong><br \/>\nIts name sounds far-out, but freekeh is actually just wheat harvested while it\u2019s still green.<br \/>\nIts nutty taste livens up a salad, like the new Mindful Freekeh and Raspberry Salad.<\/p>\n<p><strong>Quinoa<\/strong><br \/>\nQuick-cooking and gluten-free, this protein powerhouse is wonderful as a side dish, in soups, or cold in salad. We\u2019re even using it in a batch of Mindful Red Quinoa Pancakes.<\/p>\n<p><strong>Sorghum<\/strong><br \/>\nA staple in Africa for hundreds of years, sorghum\u2019s edible outer hull retains more nutrients than grains that must be hulled. Sorghum flour has a sweet taste that\u2019s just right for gluten-free baking.<\/p>\n<p><strong>Millet<\/strong><br \/>\nHigh in magnesium, which is important for muscle repair and nerve function, it has a mild, corn-like taste and can be \u201cpopped\u201d in a dry frying pan for a crunchy snack.<\/p>\n<p><strong>Farro<\/strong><br \/>\nThis savuory grain originated in ancient Mesopotamia and is loaded with fibre, protein, and minerals. It\u2019s delicious in Mindful\u2019s Chickpea and Farro Stew with Spinach.<\/p>\n<p><strong>Teff<\/strong><br \/>\nEthiopians have used this tiny grain for centuries to make traditional injera bread.
