Shawn believes it’s easy to find a go-to American or Mexican soup. What’s harder to find, says the family man and Concordia University administrator, is a Mediterranean-style soup that makes it into regular rotation. He set out to create just that when he asked us to slowly simmer chickpeas, tender chunks of chicken, cabbage, onions and spices in a rich chicken stock. Inspired by her grandmother’s homemade soup, Libby, a practice manager at a busy surgery clinic in Boston, set out to create a savory version of it that would bring back her favorite childhood memories. Seasoned tender chicken shares the bowl with hearty tortellini pasta, baby spinach and tomatoes in a velvety chicken stock. Katelan knows just what will bring a smile to your day—her grandmother’s beef stew. That was the inspiration behind the Columbia College undergrad’s bowl of yummy deliciousness. She looked for ways to put a lighter spin on the treasured dish, and our judges thought she nailed it. Tender orzo pasta (which is a similar shape as rice), Mindful Beef Mushroom Burger, a bevy of vegetables and lots of flavorful spices are slow-cooked to perfection in a healthy vegetable stock. The judges fell hard for Tina's bowl of big, bold flavors. You will, too! Her Hearty Southwestern Grain Soup is loaded with satisfying ingredients that play well together. She began with a rich vegetable stock and the slightly nutty-tasting quinoa, a protein-packed grain that adds nutritional strength. Then Tina didn’t hold back. She added our savory Mindful Beef Mushroom Burger, seasoned black beans, corn and a dash (or two!) of red pepper flakes. She finished up with a dollop of cool Roasted Garlic Basil Pesto and a splash of lime juice to provide a nice counterbalance to the soup’s spicy kick.
